On Sunday, August 23, Chef Gizem Aldana turned Evergreen into a meyhane — the Turkish tradition of a long, unhurried table where mezes stay out all night and the meal unfolds slowly. All 28 seats sold out in a week.

Gizem grew up in Afyonkarahisar, Türkiye — a UNESCO Creative City of Gastronomy — where she learned to cook from her grandmother in the tradition of Turkish hospitality: when someone enters your home, they are welcomed with food and warmth.
