Sunday Supper: A Turkish Meyhane Table with Chef Gizem Aldana

On Sunday, August 23, Chef Gizem Aldana turned Evergreen into a meyhane — the Turkish tradition of a long, unhurried table where mezes stay out all night and the meal unfolds slowly. All 28 seats sold out in a week.

Gizem grew up in Afyonkarahisar, Türkiye — a UNESCO Creative City of Gastronomy — where she learned to cook from her grandmother in the tradition of Turkish hospitality: when someone enters your home, they are welcomed with food and warmth.

    • Köpoğlu — silky eggplant over strained yogurt with a warm tomato-pepper sauce

    • Muhammara — a rich spread of roasted red peppers, walnuts, and pomegranate molasses

    • Cheese Börek — flaky pastry filled with Turkish cheese and fresh herbs, baked until golden

    • Gavurdağı Salad — chopped tomatoes, cucumbers, walnuts, and fresh herbs with pomegranate molasses (a Gaziantep-region specialty)

    • Afyon Tandır — beef slow-cooked for hours over buttery carrot rice pilaf (the signature dish of Gizem's hometown)

    • Nohut Tava (vegetarian option) — chickpeas oven-braised with sweet peppers, tomatoes, cumin, and smoky isot pepper, over the same buttery pilaf

  • Chef Gizem Aldana is originally from Afyonkarahisar, Türkiye, a UNESCO Creative City of Gastronomy celebrated for its slow-cooked meat traditions and deep culinary heritage. She learned to cook the way her grandmother did — through practice, memory, and generosity — and now brings that tradition to Bay Area tables.
